Thought I’d share this with you while waiting for approval over at all|recipes for my original recipe to be listed. Plus it goes surprisingly well with a Corona if you celebrate Cinco De Mayo with a cold one…since we had Tacos last week.

Slow cooked Shredded BBQ Chicken Sandwich with Cheddar & Bacon. A tangy southern-style sandwich that melts in your mouth. The BBQ chicken is slow cooked and piled high on a fresh toasted bun with mounds of cheddar and bacon. In the meantime, you get a sneak peak! Here goes…

Ingredients:
5 Medium Skinless, Boneless Chicken Breasts (frozen or thawed)
1 package Bacon
1 cup cheddar cheese (mild works best)
2 tbsp. olive oil
1 Medium Bermuda Onion
1 cup of your favorite BBQ sauce (I use Jack Daniels Orig. No. 7 Recipe)
1/2 c. ketchup
1/4 c. honey
1 tsp. salt
1 tsp. pepper
1 tbsp. minced garlic
1 package buns or rolls

Directions:
1. Set your crock-pot to low.
2. Place olive oil in bottom of cooker with chicken breasts.
3. Sprinkle with salt and pepper – both sides.
4. Medium to fine chop Bermuda onion and place around edges of pot.
5. In separate bowl, combine: BBQ sauce, ketchup, honey & minced garlic.
6. Pour over chicken.
7. Cover and cook on low for 4-6 hours until chicken starts to fall apart.
8. Meanwhile cook your bacon, drain and place to side.
9. Once finished cooking, gently break apart/shred chicken with a large spoon or fork.
10. Stir.
11. Cook a few more minutes.
12. Meanwhile place split buns in oven to toast lightly.
13. Shred cheddar cheese.
14. Pile shredded chicken on the toasted bun and top with cheddar cheese and bacon. Serve with Mimi’s Best Beans (recipe to come…)
