I’m done mourning. Ate take-out food this entire weekend to pay my respects to my Crack-Pot that done-bit-the-dust last week.
But…you know I HAD to…
— Pop the cans of condensed milk!!!
— Defrost the chicken!!!
— Crank it up!!!
Mama has a new BFF…well, maybe not a “forever-friend” since it looks like these crocks like to crap [out]…but she’ll do for now.
And I got her at a deep discount.

While I really wanted this pretty “Crock of a Product” (because I do actually have an unhealthy obsession with Hello Kitty and all things PINK and it would have matched my PINK “CROCS”…yup, now you know this),


I settled for this one.
Meet my NEW RCP (Rival Crock-Pot) — Ain’t she a beaut?…

…think I’ll call her “HELL-Kitty”. yup. it’s my dark side. named.
Oh the places we’ll go…
My toddler (MyBuddy) has been obsessively ['cause that's what toddlers do] working the “OFF | LOW | HIGH” switch all afternoon…saying “butt-in…butt-in…butt-in”…yes the “button” works.
Anyway.
I’m pretty psyched to fire her up tomorrow.
But first, as promised….my Tex-Mex Meatloaf recipe:
Yummm…

– 1 lb. ground beef
– 2 eggs
– 1 c. salsa
– 1 pkg. taco seasoning
– 2 c. crushed tortilla chips
Mix it ALL up in a big bowl. Shape it into a loaf (husband makes stupid “loaf” joke/comment here). Spread a dash of olive oil on the bottom on your RCP (Rival Crock-Pot), fire her up, and cook-it-baby on High for 5-6 hours. You may need to add a little water on the bottom as it starts to cook…to keep it moist and prevent bottom-burn (…more jokes here). If you’d like…you can BRUSH ON this GLAZE the last 20 minutes of cooking:
Combine:
– 1/2 c. taco sauce
– 2 tbsp. brown sugar
Brush/pour over meatloaf.
Finish cooking.
I usually serve this with Goya Mexican Rice:

And…a dash of taco sauce and sour cream to complete-the-look (and taste!)
All I can say is. YUM.

Haha… I totally thought you bought the Hello Kitty crock pot! That would have been really funny. I love everything Hello Kitty, too! How could you not? Remember the little pink haired girl and blue haired boy? I forget what they were called… and Melody? The bunny? They were cute, too! :) Congrats on the new crock! ;) Happy cooking.
