My Simple Homemade Guacamole Recipe & Attempt At Avocado Trees

Whenever my hubs and I used to go out to eat, and I get to choose, it’s usually a Mexican Restaurant.  On The Border is the closest without going into Philly.

A big frozen margarita, fresh tortilla chips and endless guacamole is how I roll.

But since, I haven’t been “out to dinner” in years, ok maybe months, but it feels like years, I decided to whip up some guacamole myself.

I bought the avocados on sale this weekend at “the Giant” (that’s how you say it in Pennsyltucky) 5 for $5!!! That’s a bargain for these little indulgent fruits.

This is how I made it:

Combined:
• (3) avocados (peeled and mashed)
• (2 heaping tbs.) finely diced red onion
• (2 heaping tbs.) finely diced grape tomatoes
• squeezed juice of (1) lime
• (1 tsp.) chopped cilantro
• pinch of salt

This is the result…

…not much leftover for me…except for the ginormo-pits…

…which…thanks to one of my favorite bloggers The Hungry Mouse, I will be attempting to grow a few avocado trees from the said avocado pits.

I did not inherit my mother’s green thumb, so we’ll see.

I have not had much luck trying to grow avocados from pits.  I’ve seen it done with toothpicks to prop them halfway into a glass or bowl of water.  Good luck.

I love my guac! If you ever get a chance, try Chipotle’s guac. It is REALLY good.

To the person asking for avocado recipes… they are really good on salads, on top of tacos, in burritos, sliced in a sandwich, etc. One of our fave chicken dishes is chili-rubbed baked chicken with avocado salsa (diced avocado, red onion, and some lime juice).

Too bad guacamole makes me throw up, otherwise that looks so good I would probably eat the whole bowl.  Something about avacados just doesn’t sit right in my stomach, and it makes me sad. =(
