While some of my Twitter buddies are actually talking about snow in their neck of the woods (ah hem @EllisFan14) – it is slowly getting chillier here in Pennsyltucky.
Along with all of the other glorious things that come with the change-over into the colder months (like the cessation of the onslaught of bugs we presently have here) – outcomes my GLORIOUS Crock-Pot.
Now this season, I’m working with a downgraded model because the beautiful Crock-Pot I received for my Bridal Shower braised it’s last beef, last season – you may remember this. She was a pretty one :(
Bought this smaller one in a pinch.
I love cooking meals with the Crock-Pot because it is so easy to use. Plug it in, chop, add, water, lid, leave it be.
It’s also great for feeding the iTwins (aka picky toddlers) because it cooks any meat down to a very tender stage. All I have to do it mash the meat in with some veggies and pasta, and I’ve just become one wiser on them – hehe!
So tonight I made a REALLY EASY VEGETABLE SOUP with what veggies and such I had left in the house (even before our little trip last weekend)

The easy steps:
• Fill your Crock-Pot with about 8-10 cups of water (set to high)
• Add 8-10 beef (or chicken) bullion cubes (I always keep a container of both in the house!)
• Few shakes of Olive Oil – about 2 tablespoons
• Few shakes of dried (or fresh if you have it) Parsley
• 2 tablespoons of minced garlic (less if it is fresh)
• Dice and add your veggies: (this time I used…)
• Carrots
• Celery (with leafy stalks)
• 1 whole yellow onion
• If you have any leftover beef or chicken, you can add that too
• Lid on and let it come to a boil – cook about 5 hours
You can eat it just like that – (CAREFUL THOUGH, remember it’s boiling!) or you can add some pasta to it.
Tonight I cooked some Barilla Ditalini separately and then added it because I know the iTwins will at least eat it if they see pasta.

Well i love the idea of my crock pot……BUT mine burns everything??? any ideas on what i can do to fix that problem. It is a pretty large crock pot so maybe i don’t have it full enough. I always cook on the low setting (but even the warm setting is pretty hot!). It’s a really nice one, but i’m thinking i might have to get rid of it and get a smaller one because i can’t hardly leave this one on when i’m not home. And thats the whole point ya know! Hummm? But the soup looks so yummy and i’ve never seen that pasta before. I’ll have to buy some of that as well. Thanks!
I just started to use my crock-pot..and i love it.
I am glad that someone loves their crock pot as much as I do. I am thinking about making some beef stew one of these days. I didn’t get mine until last Christmas though, because I never had a bridal shower. We went to Sears the day after Christmas, and ended up getting a quite large Hamilton Beach stainless steel crockpot for $17. Gotta love a good sale. I never knew how much I needed a crockpot until that day.
